Cauliflower Buns – Keto Friendly!!

These are my newest favorite buns and they are so easy to make!! I have used them for burgers, sandwiches, and even mini Keto friendly pizzas! What would you use them for?

Ingredients:

  • 3 cups finely riced raw cauliflower florets
  • 2 large eggs
  • 1/2 cup shredded parmesan cheese (or more if you like!)
  • 1/2 cup cream cheese, softened
  • 2 tbsp almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp dry Italian seasoning herb blend
  • Salt and Pepper to taste

Directions:

  1. Clean and cut your cauliflower into florets. 
  2. Grind them in your food processor till you get a rice consistency. You can also grate the cauliflower using this easy grater from Pampered Chef
  3. Microwave it for 5-7minutes till it’s tender and then remove into a mesh strainer bag or cheesecloth and squeeze out as much water as your can. 
  4. Preheat oven to 400°F. In a large bowl, combine cauliflower, eggs, cheeses, almond flour, coconut flour, baking powder, Italian seasoning, and salt and pepper. Mix with a large spoon until everything is thoroughly mixed. The mixture should be wet but not liquid.
  5. Divide the mixture into 4 parts (or 8 for thinner buns as pictured above) and shape the buns on parchment paper or a silicon mat using a cookie mold. I used the 4″ biscuit cutter from this set
  6. Bake in the oven at 400°F for 20-25 minutes till it is fully cooked and golden brown. 
  7. Once cooled, remove from the pan and use for burgers, pizzas, or just about anything as a substitute for regular bread. They store nicely in refrigerator and I reheat them in the Deluxe Air Fryer on reheat for 5-6 minutes.
